Description:
Pasta Con Pesto is an incredible dish that you will serve over, and over. As an entrée or an appetizer, Pasta Con Pesto is perfect for any occasion.
Ingredients:
1 pound macaroni-style pasta, cooked in well-salted water according to package instructions
For Pesto:
- 2 cups fresh basil (washed, dried and stems removed)
- 1 cup fresh Italian flat leaf parsley (washed, dried and stems removed)
- 1/2 cup fresh spearmint (washed, dried and stems removed)
- 8 cloves garlic, peeled
- 1 teaspoon chili pepper flakes
- 1 tablespoon capers, drained
- 2 shallots, peeled
- 1 teaspoon lemon zest
- 1 tablespoon kosher salt
- 1 1/2 cups excellent quality extra virgin olive oil
Preparation:
In three stages combine all Pesto ingredients (except olive oil) in bowl of food processor or blender and whiz until finely minced. With motor running, slowly add olive oil in a steady stream. Continue processing until well-blended and emulsified. Check for seasoning. Toss with hot, well-drained cooked pasta and serve.
