Description:
Seasoned, Baked Pumpkin seeds


Ingredients:
1 medium size pumpkin

1 tbls Olive Oil

salt


Preparation:
Its almost Haloween... and yes time for pumpkin carving. But don''t let the yummy goodness inside go to waste. Not to mention, pumpkin seeds are actually a healthy snack, that the kids enjoy eating! Once you have finished cleaning out your pumpkin for carving, seperate the large chucks of goo from the seeds, place the rest of the innards ( goo, seeds and all ) into a large bowl of cold water. After a few seconds the seeds will float and the rest of the goo will seperate and fall to the bottom. Strain and rinse your seeds, bring them to a boil ( add 1 tbls salt to the boiling water) and let simmer for 10 min. Strain and then spread the boiled seeds in a large baking pan or cookie sheet and coat them with 1 tbls of olive oil. Bake at 400 for 20 min. or until golden brown. The crispier the better. Salt to taste. There are a variety of other seasonings that you may use, but this one keeps it sensible for your diet. Enjoy
